This includes the enhanced Botero Lounge; Olivine, a chef-driven Italian restaurant led by Executive Chef Ryan Urig; and the resort’s acclaimed flagship seafood restaurant, Humuhumunukunukuapua’a.
Striving for even greater heights, the Grand Wailea has revealed a new culinary collaboration with the internationally renowned restaurant brand, Nobu. Scheduled to debut at the Maui resort in the summer of 2025, Nobu at Grand Wailea will enhance the resort’s dining options, marking the first Nobu location in the Hawaiian islands.
The introduction of Nobu at Grand Wailea is a significant aspect of the resort’s comprehensive $350 million renovation, undertaken by its owner, Blackstone Real Estate. Nobu will be situated adjacent to the signature restaurant, Humuhumunukunukuapua’a, which saw its relaunch in 2023.
“We are deeply excited to bring the Nobu signature dishes and dining experience that guests have come to cherish to Wailea Bay,” says Chef Nobu Matsuhisa. “The opportunity to share the classic dinner, alongside a curation of menu items exclusive to Grand Wailea, is a source of pride for us and allows us to expand the brand’s footprint within Hawaii with an aligned hotel partner.”
Nobu at Grand Wailea will feature over 13,000 square feet of indoor and outdoor dining areas, complete with a dedicated sushi bar, accented by stunning murals and sweeping views of the Pacific Ocean. The menu will highlight signature Nobu offerings such as the famous Black Cod with Miso and Yellowtail Jalapeño, alongside the renowned sushi that the brand is known for.
Founded three decades ago by Nobu Matsuhisa, Robert De Niro, and Meir Teper, Nobu has become a distinctive hospitality brand, now celebrating its 30th anniversary. The brand has expanded into a global phenomenon with 54 pioneering restaurants and luxury hotel offerings, including Nobu Residences.
Nobu is celebrated for its signature dishes and exceptional service, merging traditional Japanese cuisine with Peruvian influences, which consistently attracts fans worldwide. Its sophisticated atmosphere and seasonal Omakase menus continue to delight patrons across the globe.
