Residents of Aspen are excited to be among the first to experience the new HaSalon culinary venture at the W Aspen hotel. Set to launch in mid-December 2024, the acclaimed Israeli chef Eyal Shani is introducing his innovative Mediterranean concept to Colorado. This immersive, multi-sensory dining experience promises to push the limits of excitement and surprise.

The skilled mixologist is a pioneer in cocktail crafting. Zaric, known for his iconic Employees Only bars, will unveil a new bar concept called Hidalgo, featuring drinks inspired by Aspen’s vibrant local ingredients. Guests can anticipate a selection of enticing handcrafted agave cocktails.
Situated on the lobby level within the hotel’s impressive grotto, the bar will become a permanent highlight of W Aspen. Guests may want to begin their experience with the Pine For Aspen cocktail, created with Bombay Gin, Becherovka, lemon juice, an infusion of pine needle leaf syrup, and a misting of Fernet Branca, garnished with a sprig of rosemary for added aroma.
Other noteworthy cocktails include the “Improved Margarita Cocktail” and the “Yellow Jacket,” each offering modern interpretations of classic drinks made from fresh ingredients. This new cocktail bar will be open Thursday through Monday starting at 6 p.m.
Every guest dining at HaSalon (which translates to Living Room in English) will receive beautifully baked squares of golden focaccia topped with roasted tomatoes and strands of red onion, lightly dusted with sea salt that enhances the natural flavors. ”Food is as natural as it can be,” stated restaurateur Erica Pulicicchio. ‘Chef Eyal is a curious chef, and his team immerses guests in the culinary journey, narrating the stories behind the menu to enrich their dining experience.’
A prime example of the menu’s offerings is the ribbons of fennel paired with thin slices of avocado, adorned with earthy dill and poppy seeds. The dressing is light enough to allow the flavorful fennel and other components to shine through.
Culinary highlights on the menu include charred beet carpaccio, served as a stunning sheet reminiscent of stained glass. The ruby and yellow beets, sliced thin and baked, yield a tender texture that maintains their natural sweetness, complemented by a pleasing smokiness in each bite, balanced by a dollop of crème fraîche and shaved horseradish.
Other shareable delights comprise baby potatoes crowned with Osetra caviar, perfectly sliced bluefin tuna, and ribeye steak prepared to the guest’s preference.
Signature pasta dishes feature creamy green rigatoni and ricotta-filled pasta “clouds.” The chef’s spaghetti drizzled with Ossetra Caviar dazzles in an ethereal San Marzano tomato sauce.
Chef Eyal has established over 46 acclaimed restaurants worldwide, including Michelin-starred venues such as Shmoné, Port Sa’id, Miznon, and Malka. With locations spanning New York City, Las Vegas, Miami Beach, Tel Aviv, and now Aspen, HaSalon stands as a must-visit destination for fans exploring these cities.
Another favorite among patrons is Bourekas, ready to be baked. This puff pastry, filled with spinach, comté, ricotta, and parmesan cheese, features herbs and a sprinkle of sesame seeds. Served piping hot from the oven, it comes with an Israeli salad and crème fraîche infused with herbs.
Conclude the evening with a generous slice of pistachio olive oil cake, complemented by raspberries for a hint of sweetness. Additional menu highlights include Basque cheesecake, sorbets, and a chef’s mystery selection.
