In 2015, Tucson, AZ was honored as the inaugural UNESCO City of Gastronomy, a title well-deserved. Embracing genuine tastes, creative culinary techniques, and a strong sense of community, Tucson’s gastronomic landscape is extraordinary. Championing the city’s acclaim, Chef Tyler Fenton devotes himself to perpetuating this recognition. BATA, situated near the heart of Downtown Tucson, checks every box: atmosphere, hospitality, drinks, and dishes.
Chef Fenton, tantalized by seasonal produce, extends the life of ingredients through pickling and curing. Adhering to a 400-mile sourcing guideline to include coastal provisions, the plant-centric repertoire is bound to captivate even ardent carnivores with starters and mains. The touch of flame graces each creation, allowing a taste of Tucson’s rich agricultural legacy in every morsel. Indispensable to the menu is the house-crafted malawach bread, a staple since inception, whose removal could arguably incite protests. A variable menu, dependent on the freshness of the day’s produce, ensures a distinct dining experience with every visit to BATA.
The culinary delights are kindled by roaring oak flames, reflected in the cozy environment of the establishment. The rawness of brick and the organic feel of wood amplify the establishment’s intents, while the barbata bar downstairs offers a stylish setting for innovative mixed drinks. The service at BATA, epitomized by my server Roxanna, was both personable and adept, with an impressive command of the culinary techniques and select ingredients. The dining area was the stage for an exquisitely synchronized ballet of service, where each nuance was meticulously cared for.
Under the stewardship of Fenton Family Restaurants, which encompasses various dining ventures, Chef Tyler Fenton collaborates with siblings Zach Fenton (CFO) and Courtney Fenton (Director of Operations) to enhance Tucson’s chefscape. I cannot advocate for BATA enough. It stands out as an essential culinary destination in the city. For reservations, visit www.batatucson.com.
